Steamed
Kale
I never even heard of Kale ten years ago, after all a hamburger and fries
was all the nutrition any one needed right? Since I became a vegetarian
ten years ago I have been eating some Kale with a number of my meals,
but I never really liked it. Last month when my daughter visited from
Denmark she cooked us a Kale dish that was wonderful! Kale has twice the
RDA of vitamins A & C. and one cup of cooked Kale has 179 mg of calcium.
Anyhow here it is.
1 tomato
1 small onion
2 carrots
1 head of Kale (be sure it’s fresh or it gets tough)
1 cup of cauliflower
Olive oil
Cut everything up into small pieces. Wash all the Kale leaves. In olive
oil, sauté onions and tomatoes in a large pan for several minutes.
Then cover the bottom of the pan with water 1/8 to 1/4 inches deep. Add
the carrots and cauliflower, then cover and let steam until the carrots
are tender. Add the kale and let steam for just a few minutes until the
Kale just begins to look wilted. Serve. Yummy
