Roasted
Veggies
This is one our most favorite dishes. We make it on the weekend because
it is so quick to make and yet is so great!! It also makes a great snack
for watching TV.
All you do is cut up veggies in large chunks in the amount you can eat
or get on a large cookie sheet. Any veggies you like will work but our
favorite four are:
Small new potatoes cut in half or fourths
Carrots
Green peppers
Onions
Once the veggies are cut up put them in a bowl, and add just enough olive
oil to coat the veggies, sprinkle on some pesto seasoning, ( or any seasoning
you like) pop in a 450 degree oven, and cook for about 20 minutes.
Even people that don't like veggies will like this.
