Spaghetti & Broccoli
Here is a very simple, very good and very
healthy meal.
Take two stalks of fresh broccoli and cut the flowers off. Put flowers
in steamer and lightly sprinkle with salt. As broccoli steams, fill a
saucepan about 2/3 full of water and bring to boil. Once boiling add about
two inches in diameter of tightly held spaghetti to the water. Cook spaghetti
according to the instructions on package (about 7 to 10 minutes). When
spaghetti is done broccoli should be done, but it’s a good idea
to check on broccoli once while spaghetti is cooking. To be good, steamed
broccoli should have just turned a very dark green, and should be cutable
with a fork with slight difficulty. Add one teaspoon of olive oil to spaghetti
and stir it in. Add broccoli to spaghetti and garnish with a small amount
of grated Parmesan cheese. Kamut or Spelt spaghetti are good options for
those eliminating wheat from their diets.
